First of all I would like to congratulate the people that found my site before I even realised that I had published it. This was still work in progress so some pages may have looked incomplete. I will be reviewing this over the next few months.
Trying to start up a business during 2021 has been more of a challenge than I imagined. We have had Brexit, COVID and problems with the supply chain impacting businesses of all sizes. This has meant that it has taken much longer than expected to get to where I am today.
The good news is that I now have a stock of beans and expect to take delivery of cocoa butter and sugar in the next week. This will allow me to start production, although I will probably wait until after Christmas.
I am feeling positive about sourcing packaging after issues earlier in the year. The design is being finalised and I hope to have a sample shortly. If all goes to plan the packaging should arrive by the time my first batches have had a couple of months to mature.
I am sure you are wondering what I will be offering. To start with I have sourced beans from 3 regions of South America. These are Maya Mountain in Belize, Sierra Nevada in Colombia and Cahabón in Guatemala. The plan is to offer these in a dark (minimum of 70%) and milk (minimum of 50%) version. I also want to offer a white chocolate which will contain at least 40% of full flavoured cocoa butter.
